One thing I remember from the VA's group chat on the weekend was that Echo can have massive sugar rushes followed by crashes if she isn't careful with her intake of fruits. Hyperactive followed by near catatonic state.
Working on that, there is plenty of room to throw in a quick scene played just for laughs in which Jack and 456 come back to the hub to find Echo basically wacked out of her mind on sugar - hyperactive twitches, rushed words, extreme ADHD behaviour (Think Pinkie on a bender). They go searching and find that she had been snacking on Zap Apples, which they know causes her to go nuts. She gives a very unconvincing denial when they ask about it.
- Pair search Jack's office at the hub and find his safe locked tight and several Zap Apple cores on the ground.
Jack: I thought I locked those things away
456: She can pick locks, remember. She can hear the clicks of the tumblers. I told you we need to go digital, but no, you like the old fashioned ones.
- Both move out into the main area and find Echo Dashing around examining things.
Jack: (Lightly playful voice) Echo, have you been eating those Zap Apples again?
Echo: (Unconvincing lie while she is twitching constantly) .... No?
456: (Muttering under his breath) Likely story. (To Jack): I'll go get the drunk tank ready... again.

I really like it but I don't think Echo would steal the apples (especially with how much she berates 456 for stealing)- it would be more likely for 456 to 'accidentally' leave a few lying around. Hehe, it is already head cannon that Echo is banned from Applejack's farm.

I suppose you would know Echo better than I would. I just want to see her go nuts one.
Alternatively, it could be that she somehow manages to get her hooves on a mug of Zap Apple Cider.
Jack: Sweet Celestia!
Trixie: That's it, Trixie's out. (Teleports the hell away)
Jack: 6, how many stun darts do we have in stock?
456: Not nearly enough.
